More then 250 mitochondria to nuclei gene transfer is know to have
occurred in plants. Yes, most of them ended up as pseudogenes, but
some not - a minor and  lucky mutation could reactivate the protein.

And you don't need to get a whole gene. Since most of proteins are
composed by functional domains, you - well, the natural processes -
could just shuffle domains between proteins - actually shuffle gene
sequences that code the domains.
